If you’ve never had Icelandic lamb, you won’t believe what you’ve been missing. Break out of your regular dinner rotation rut with something really flavorful and different.

It’s on our dinner table when we cook for family and friends. We even served it at our wedding and our guests loved it. I know your family will too.

2023 lambs will be harvested in January. Please fill out our information form reserve yours.

  • $8 a pound hanging weight

  • hanging weight ranges from 40 to 65 pounds

  • Processing by Potlatch Pack - we will send them your cutting instructions.

Your questions answered

  1. “I don’t have a lot of room in my freezer”
    Lamb is perfect for you. Once they are fully processed, they take up about as much space as a paper grocery sack. So, it is not as big a commitment as something like half a cow.

  2. “I had lamb once and didn’t like it.”
    Icelandic lamb is different. It is very mild while still packing lots of flavor that always surprises people who expected not to like it. Turns out they love it. We even have a vegetarian friend who makes an exception for our lamb.

  3. “I don’t know how to prepare it”
    That’s fair! It’s different and if you treat it like beef you will be disappointed. We’ve got you covered. Your lamb will come with tips from us on how to handle it and a few of our favorite family recipes.

  4. “I only want half a lamb”
    Laws and regulations only allow us to sell you a whole animal. But, you can go in on one with a friend. Just provide us with everyone’s name and contact information and our processor will divide it up.

Fiber

Icelandic sheep produce amazing fleece, prized by spinners and fiber artists. We shear twice a year. Let us know if you would like to be part of the fun, or if you are interested in a fleece.

How we do it  

We are stewards of this land for the time we are lucky enough to live and farm here. We take sustainability seriously and are committed working in harmony with the land as we produce the very highest quality meat for your family. We spend the summer moving the flock around the property using solar powered electric net fencing and we produce our own hay to feed the flock after the grazing season has ended..

Predator Control

A pair of Livestock Guardian Dogs (LGDs) live with the flock for predator control. We like the natural method of canine behavior controlling canine behavior so that the coyotes can have their own territory and live their best lives while leaving our flock alone.

Beulah (named for the lake where Colleen grew up in Wisconsin) is a purebred Great Pyrenees.

Okatee, who we call Oka, is named for a beloved river from Steve’s childhood vacation place in South Carolina. She is a mix of Pyrenees, Anatolian and Akbash (two Turkish LGD breeds).

They’re absolutely dedicated to the sheep. We’re grateful for their work in allowing us to raise our flock in harmony with the environment.
